For window installation on masonry, the instructions say use an optional 1x buck. What width should this be? Is this a 1x4, or should it be wider since the block is 8 in?

Probably need to sit down with pencil and paper and figure out the total wall thickness including inside finishes. If it will be exposed cmu block inside and out ... 8” will work. If you will have hat channels and sheetrock on the inside ... need to stretch the board a little.
And there’s no reason you couldn’t use a 2x.
