Probably need to sit down with pencil and paper and figure out the total wall thickness including inside finishes. If it will be exposed cmu block inside and out ... 8” will work. If you will have hat channels and sheetrock on the inside ... need to stretch the board a little.
And there’s no reason you couldn’t use a 2x.
Are you sure? Here is the detail. The buck is the width of the window and doesn't say include the width of stucco and drywall. In fact, it doesn't even say include all 8" of block.
