If installing an additional layer of 3/8 plywood subfloor over 19/32" OSB do you think using a thinset between the layers would be acceptable?

NO.

That's 5/8" OSB, why is that your subfloor and what are you gonna install over the new underlayment?

Just bought the house, it's 10 years old. I am taking carpet up in 2 of my bedrooms and installing laminate. Reason for the additional layer of subfloor is to sturdy up the OSB some because there is a little deflection between joists in a couple of areas and I need some additional height to the floor.

Since your subfloor is only 5/8", I recommend installing 1/2" underlayment grade instead of 3/8" The 1/2" will stiffen the floor a lot more than the 3/8". Underlayment should never be glued to the subfloor. If you used construction adhesive, it would actually creat voids and make the floor more spongy.

Good move to get rid of that stickin' carpet.
