I am thinking of attaching my multi-slide aluminum door directly to the Steel I-beam header. Is that do-able? level of difficulties? how? and what to beware of?

I think the more common way is to attach a 2x nailer below the I-beam. I don't want to do that because I want to flush the ceiling to the soffit outside without stripping the ceiling and the soffit.

Posting pictures will help us to help you so we can see what you see. Give us measurements of not only the door, but the proposed opening as well.
 
Never installed multi pane slide doors. I'm guessing only. I assume any opener must have some kind of track and rollers, on the floor or top?. You want to attach the track to I beam? Taking example from usual slide door, does this have a set frame? How do you square and level them? Attaching the track to metal suggests welding but how to adjust? Only thing I can think of is that any header, ceiling and soffit would be designed as one. If retrofit, your first to do would be installing the door then if must, modify the ceiling and soffit.
