Looking for advise on best plug for countertop (which isnt installed yet). I see various pop up kind and didnt know which is more sturdy/reliable.

The pop-ups need to be listed for countertop usage, not work surfaces. The difference is the ability to withstand liquid spills. They will not be cheap.

Is there something keeping you from normal wall mounted installation??

As Jim stated, they aren't cheap.

The 2023 NEC does not even require a receptacle on the island. Some feel they are more dangerous having a hot plate or something plugged in that could be pulled down by a child.
