Paint is just on the surface. Repainting does not require removal of the siding. If you want to change siding, then you need to look into the products that please you and let us know so we can advise what to do next. Your windows and doors are set to the T1-11 presently, so adding more siding will affect their setback.

I don't paint, but it would seem relatively easier to repaint the T1-11 to a more pleasing color.

I've painted a lot of T-111 and RB&B panels over the years. I like to use a 1" roller cover and kind of slop the paint on while the cover is wet and then as the paint on the cover is used up, back roll to dress it up.
