I am planning a kitchen remodel which will include this farm sink.

I am seeking guidance on whether I need to plan for any plumbing changes when I have access to the wall behind the cabinets. From the pictures below, it looks like the top of the trap is about 10" from the current sink drain. The current sink is about 7" deep as measured from the underside to the bottom. The new sink is 10". It looks like I might be cutting it close for leaving the drain line as it is. Should I lower it a couple inches while I have the chance? Also, if I keep the disposal, should I move the drain line off center since the new sink is a single drain? Anything else I should plan for?

Since the new sink is a single drain, the T is going away whether you keep the GD or not.
Are you planning on support under the new sink?
Yes, there will be some support under the sink. I don't know exactly what it will look like yet. I have an Amish cabinet maker building everything for me. I will have to bring him the sink soon for him to fit into the cabinet. I will ask him how it will be supported then.

Looks like you have around 10" tailpiece so the new depth should be ok. But the disposal if you keep it, will add more so you need to add that depth to the equation.
Also, before the new cabinet is set, take the waste 45 off and leave it stubbed straight out of the wall. Extend the two copper risers up without the tees attached. Doing these 2 things will make your base install cleaner and simpler. The fittings can be added back when you trim the sink. And it looks like your hose bib line, or whatever that high pipe is may need to be lowered...

I know the best thing to do is to eliminate the disposal because 1) we are on a septic system and you are not really supposed to use a disposal with a septic system and 2) keeping the disposal creates more work for me. However, the design committee (my wife) wants a disposal. We have had one here for 25 years and have not had septic system issues as we don't really use it much and thrown bulk stuff in the trash instead of flushing it.

I think the bottom of the new farm sink will be 5 inches lower than the bottom of the current sink. I think there is only 2-3 inches of extra tailpiece so I will need to lower the drain line 2-3 inches to accommodate the disposal. The p-trap horizontal line is on the right side of a stud and then turns left and goes through 2 studs before it gets to the vertical drain/vent. In order to lower the drain line, I will need to drill new holes through these studs.

Will drilling new holes in the studs of an exterior load bearing wall create any structural issues? Is there anything I need to do to strengthen the stud around the old hole? I can probably avoid drilling through one of them by simply starting on the left of the right most stud, which is a cripple stud under the window.

Here is a better look at what is in the wall. The laser line is about where the bottom of the farm sink will be. The disposal discharge will be just below the top of the sanitary tee, so the tee needs to be lowered a little bit.

Can I safely drill another hole for the horizontal line through the cripple stud and king stud for the window about 3-5 inches lower than the current hole? It probably needs a stud shoe as it is now. Is it ok to drill the new hole and add a stud shoe to both the new hole and the old hole? Or do I need to add another king stud next to the existing one? Or do I need to just punt and give up on the disposal?
