It sounds like you're on to something with the water temperature. Try turning the water heater up a bit to see if it impacts the cycle start delay. The only other thing it could be is the delay wash feature but that's typically 2-4 or 6 hour delay.
Edit: one more thought and more likely the case is that the heating element needs to be replaced.
 
This dishwasher will hold the wash cycle until it hits 120°F. I would look at the output from the temperature sensor. As much as I hate using the parts cannon, it might be easier to replace the sensor than to get the specs from Whirlpool (which I believe makes the KitchenAid brand).
One thing you can do is manually check the water temperature in the DW about 30 minutes after starting the cycle. That would definitely rule out if the water is not hot enough.
