Generally I'm a proponent of using the right materials for the job.
When it comes to doorbells, however, I don't see what—from a first-principles standpoint—is 'improper' about running, say, Cat5e 24 AWG to the doorbell.
My reasoning:
a) 4x 24AWG = ~1x 18AWG. (Most red-and-white twisted "bell wire" is 20AWG)
b) PoE runs on a single pair.
b) Doorbells are transient, not sustained loads so no risk of overheating.
c) Most Category cables are rated CMR or better (is "bell wire"?)
My EC was opposed to the idea but couldn't give me a reason aside from "just no".
