I had stainless steel, it was good but not fancy enough for the Boss.
I had porcelain/enamel, whatever over cast iron. It scratches, chips, glasses break easily in it.
I had Corian, it gets stained, scratches, I spent hours buffing out damage regularly.
Now back to stainless steel, it is the best.

As Old Thomas has stated, the Boss will pick an expensive one but, it is important to pay attention to the thickness of the steel. A cheap contractor stainless sink will move every time you use the faucet. Because it's too thin. Let the Boss pick style, double sided etc. You are just the lowly installer.

Heavy gauge, 10" deep stainless drop in with 1/8" thick top flange (had one by Ariel). Super strong, super durable, and the patina gets really nice after several years of repeated scrubbing every day with scotch green pads. The thick stainless will not dent, and drop in is easiest to keep the edges clean.

Had solid surface under mount - never again... ended up cracking at drain from Heavy Duty disposal vibrations.

Won't consider porcelain due to potential for staining.
