I am adding a socket to an external wall that already has solid foam insulation and plasterboard on it.

I have cut a hole for a gang with a pad saw. Turns out the insulation and plaster board total 25mm deep.

Unfortunately most drywall gangs are deeper than 25mm. But i have a metal gang that is 25mm deep that slides in and i can screw it to the solid wall behind.

Is there any reason not to install a metal gang in plasterboard? Am i setting up a condensation trap? Should i insert plastic patress instead?

To the best of my knowledge dew point temperature isn't material selective but condensation is just more visible on some surfaces. Condensation easily seen on some metal and plastic surfaces may not be visible on bare wooden surfaces because of the wood tending to absorb the moisture. Whether a surface has reached dew point temperature is what's important when considering condensation.
