I'm installing a new outlet in my garage for my welder. It has a NEMA 6-50 plug which only requires 2-120v wires and 1-ground. My question is, can I buy 8/2 wire and use the 2 coated wires for the 120v lines and the bare wire for the ground? Thanks in advance.

Yes, you can.

But.....what if later you wanted to use something that needed a neutral? If it was me, I'd run 8/3 and wire nut the neutral. The cost difference is minimal....but if you wanted to do it later....it would cost a lot more.
