I'm changing out a ceiling fan/light to a regular light. In the ceiling I had a b/w/r so I eliminated the red and went b/b w/w but now the light stays on all the time. If I just change it to b/r and w/w and eliminate the black will this fix the issue? I don't want to take it all down and redo it for it not to work. I have to run out for a few so thought I'd post and have an answer when I got back. At the switch I have both the b and r wire connected to the switch, is it easier to fix the problem there?

Yes the red is the switched wire. Connect it and test before you fasten the fixture in place.
