Hello Im removing a ceiling fan which is wired to three wires red,black, white and groung but replacing with a standard two wire light fixture black and white wires. Which wires do i use to be able to control from the existing light switch.

Either the red and white or the black and white, plus the ground, you choose. Put a wirenut on the unused wire and tuck it into the ceiling box. When wiring the fixture make sure the socket shell is the neutral. (grounded conductor). It's the threaded part (shell) of the light bulb socket.
