I am planning to run new wiring in my already built lean to patio cover with a metal roof. I want to install two ceiling fans and an outlet for outdoor string lights.

Would using UF-B be to code or do I need to go with running THHN in PVC conduit? Once I have the wiring installed, I will be covering the electrical work with soffit, so none of the wiring will be exposed. This makes me think I can get away with just UF-B and not have to mess with the conduit. If I do need to use conduit, should I go with schedule 80 or would 40 be good enough?

The install without conduit would go much easier but I want to make sure it is done right and safe.

I used UF for my metal gazebo. I ran it through the framing members so it would not be visible and not subjected to physical damage.
UF is fine as long as you treat it like its NM.
Can you pull it inside the framing members? You might be able to as I did by using a fish tape. I then used chase nipples for weather proof boxes surface mounted.
All the wiring hidden except a small piece at the very top that feeds the fan box.
