I just had a driveway poured this morning. I've read that keeping it wet helps it to cure. How long after the pour should I start? Do I just keep a constantly wet for a few days (sprinkler)? Is it worth it? I'm not sure how much that would add to my water bill

Start the next day. Misting it lightly on a regular basis will work. All you want if to slow the hydration of the concrete. The slow cure helps to strengthen the slab.
It does not need to be continuously sprinkled on until the water pools. Lay out some burlap and soak the burlap as often as it needs to keep the burlap damp(ish) for a couple of days should do it.
Having said that, many slabs never get a soaking and do fine.
