I'm installing new kitchen cabinets. I'm using #10 x 2 1/2" cabinet screws to fasten to the studs. I have a 27" x 30" wall corner cabinet with 4 screws in to the studs on the right side but only 2 screws on the left side because of the existence of only 1 stud. Should I fasten with 2 more screws and what type of anchor? Remembering I have to go through the 1/2"? 3/4"? x 2" anchoring wood on the top and bottom of the back of the cabinet.

Then I have a 12" x 30" wall cabinet with only 2 screws, 1 top, 1 bottom.

The cabinets are also screwed to each other with 3 trim head screws through the front framing.

If the french cleats prove to move the cabinets too far forward, you can cut out the sheetrock in each location insert a 2x4 at the top across the stud bay(s), replace the sheetrock and have a place to screw the cabinets. No real need to finish the sheetrock since it is covered.

If you are at all concerned about it, you can even put screw in through the upper back, lower back, upper front, and lower front between the adjoining cabinets.

With wall cabinets that are filled with stuff the load is both down and out and can pull the cabinet away from the wall. In this situation a wall anchor is not going to be very effective.

Putting more screws into the existing stud will only help in part as the overall integrity of the cabinet will be compromised where it is not supported by attachment to a stud. Not a problem if the cabinet holds cereal but a problem if it holds can goods or dishes.
