Alright , so I am redoing my upstairs bathroom and have removed all the fictures (Sink, Tub, Toilet). My question is while the sink is out, before I put in the new vanity in, do I need to cap or vent the drain pipes to prevent sewer gases, or can I just leave them open until such time I am ready to put in the new sink. Thanks for any help.

You can stuff a rag into the open pipe or place a cap on it. If it won't be in the way, you could install the trap and add water temporarily. You do not want to leave any sewer pipe open to the home.
