I have just purchased and old building and I am starting to remodel. I want to change out the meter box outside and install a new panel box inside I have a 100 amp panel inside and want to change it out to a bigger one is 200 amp box the biggest you can go

Define old building.

I checked off "contractor", because anyone who has to ask the question, especially the way you did, should not be doing this work. No matter how easy it might seem.

Only a well seasoned electrical DIYer should be messing with a service, and this is ONLY in their own home where they live.

Commercial settings all bets are off. IMO there is NO such thing as a commercial DIY job.

I will use a contractor just want to get some info to back up what he says the building is 40 years old. Can I gat a bigger than 200 amp panel the reason is It has a bar room attached and want to run it by itself and the house is 3500 square foot and a 2,000 square foot porch that will have a lot of electrical equipment to run

you can get as big of a service as you want. Need 1200 amps; get a 1200 amp service. Need 10000 amps, get a 10kA service.

the size of service is only limited by the amount of money you have.

There is alot of little details can really change the service size and IMO 3500 Sq Ft is pretty good size and all it depending on what ya got on there like electrique stove, electrique water heater , A/C etc etc and a good contractor will able know what service size to use and IMO with that size if everything electrique then I will denfitly go with class 320 service { 400 amp resdentail size }.

And once you upgrade the service there are few other parts you will have to bring it up the code as the Electrical contractor will know the most recent code requirement so it will affect in someway.
