Hi,

I'm starting to redo the laundry room (demo'ing the closet so far) and took a look at the existing tiling.

First time I've tiled anything and I've noticed an extra layer underneath the tile and on top of the wood. I believe I should try to keep this layer intact when removing the existing tile? And put the new tile on top? The tile does appear to be slightly higher than the wood in the rest of the house which would explain the extra height added.

Included some pictures for reference.

Looks like some kind of grout or mortar layer, or possible cement board. I don't know how much luck you'll have keeping it intact. I'd remove it all down to the wood subfloor and replace with 1/4" cement/hard board. That'd help get you down in thickness too.
