Temperature to start finishing

Detached garage in MN. All rocked and awaiting tape/mud/finish. Temps are hovering around 50s. Garage stays upper 30s/40s(no insulation above lid yet). Question is if it stays above freezing in the garage itself, is it ok to start to tape? Or is it too cold? I realize it will take longer to dry, but not too concerned as I will chip away when time allows. Maybe use hot mud to tape for quick dry, then when warms up, next coats all purpose and light? Or ok for all purpose for tape and 2 coats?

I have pushed the envelope with mud before and escaped unscathed. We always kept some type of heat going just to insure that the temps were always above freezing. Quickset is a great option for that first coat. Your topcoats WILL take much longer to dry, so, if your'e ok with that, I say go for it.
