I have a couple of 120 gallon LP tanks which feed my combi boiler. I want these tanks to also feed my dual fuel generator, but my gas company won't tee off the tanks for this purpose. While having my boiler cleaned, the tech said that I can tee off the line after the LP passes through the regulator and before it gets to the boiler. My question is: Will the pressure be too low to run both (high demand) appliances at once. Ideally I'd like to use the generator to power the boiler to get hot showers, among other things.

You have to run the numbers. There are numerous gas line sizing charts available by googling online. You'll need to know the btus of each device, the pressure after the regulator and the lengths and size of the lines.
