what is the best subfloor to use in a kitchen when tiling

#1 Need to know what's under the floor before even thinking about tile.
The size, free spans, spacing, species of wood, of the joist.
Tile can not be laid over a floor that flexes.

What's there now for a subfloor?

You probably meant to ask what the best underlayment is not subfloor? But as Joe said we should first need to know about the subfloor and the framing.
