I usually make stuffed peppers in the pressure cooker...
This time I decided to make them in the oven.

First I pad-boiled them (whole) for about 6 minutes, removed
them and let them cool before slicing in half.

I stuffed them with ground beef, rice, seasoning, and some (jar) tomato sauce.

I put some extra sauce on top with some graded parmigiana cheese..
The remaining sauce I mixed with a little milk and poured it on the bottom
around the peppers..

Baked about 25 to 30 minutes at 375* then took them out -lowered the temp to
350* ... topped with mozzarella cheese and put them back in the oven for
another ten minutes.

I served them over a little bit of pasta (small shells) spooned the extra creamy sauce on top...
Also made homemade french bread.

Thank goodness there is enough left over...cause I’m tired!

Senior, that’s the worse part - cleaning up the mess...It takes more time to
clean up the ‘prep mess’ than to cook it. And I’m a very messy cook...

That’s why I’m so tired, the head
groundskeeper was busy, busy, busy doing outside chores, he usually
helps me!
But, he did do the clean up afterwards.

I'll agree, cleaning up after is the worst part and I don't get help anymore except she does put away stuff after I wash it. Naturally the dishwasher gave up the ghost several years ago so all hand washing. That's normally OK since I seldom do the kind of cooking I used to. Just the two of us so washing takes 5/10 minutes normally.
