I have a small Karcher pressure washer that the capacitor went bad on. I can't find exact replacement to fit back in place. I found one that is a little larger physically but with same specs. Is it safe to just find a place inside the housing to set the new capacitor in and then run 2 separate jumper wires off of the new capacitor to the motor.

As long as the wiring connections are located in a safe enclosure, of course you can.
I mean the wires are not exposed and in the same space the old cap was located.
Pressure washers use water.
Be careful. The cap will work, but it must be installed in a dry place preferable in the same space as the other one was.
