In the gallery world we buy spots and floods with different focus depending on what we are lighting. I am not sure what options you have for the type of fixture you bought but check to see if the lamps come in a wider focus. You may have to go to an electrical supply, lighting shop or purchase online to get them. You may be able to buy a different lens for the fixture also. As a last resort, you might try some theater lighting gels to diffuse the light.

Obviously by its nature, stainless steel is going to show hot spots since it is so reflective. Widening the focus and/or diffusing the light should help.
