I have a quote for plaster in an attic room that calls for "rounding" the edge where the sloped ceiling meets the horizontal part of the ceiling. He said that it looks better because it would be really hard to keep a sharp angle looking straight.
Any comments?

Right on. Rounded edges/corners might be suggested for a DIY, because it DOES take some practice. But never for a contractor.
