Our house used to be a one floor and they opened the original roof like slicing the top off of a cake. The original roof is still visible in the attic. Should this be left alone or could the old boards be removed leaving the frame in place?

I'd leave it unless the boards NEED to come up. It'll be a huge PITA to do.

You can demo as much or as little there as long as you don't mess with anything structural. What you have there is called an overbuild. If you are just talking about cutting an access into there then no problem. As stated, it's usually a messy PITA from inside the house.
