I'm getting ready to terminate some in-wall CAT 6 that I bought from MonoPrice.

Do I need to buy RJ-45 jacks from them? Or can I buy any brand?

And is there anything I should be looking for?

You should be able to buy any brand. Just be sure you buy CAT6 version if you want to maintain CAT6 speeds. RJ45 have ratings the same as the cables.

RJ45 defines the jack/plug configuration. It does not care if you are using Cat 4, Cat 5, Cat 5E or Cat 6.

Those RJ45 jacks from Monoprice will work just fine.

And while you'll see "requirements" that you need Cat 6 for Gigabit, I'm running a section (albeit less than 20 feet) of Gigabit on Cat 5e.
