We are thinking of opening up a small food service place here in bergen county NJ, and I'm wondering if anyone can help me find some code PDFs to help me figure out if we are going to need a hood, make up air unit, etc.

I think that there must be a requirement based on the BTU/hour or CFM or something?

Call the local code enforcment and see what they say.
