I need to remove rotten dry wall around my shower but dont want to tear up the ceiling beside the shower. I dont want to mess with the ceiling because I dont want to have to texture a new ceiling. Can you add new board on the walls without having to damage preexisting ceiling texture?

Ive yet to do any drywall work but I know when 2 pieces come together it has to be taped somehow. So it looks like Id have to pull the old tape off the preexisting ceiling piece which would pull off some of the ceiling texture.

A textured ceiling in any room is a bad idea, in a bathroom that's just not right.
Impossible to clean and will be a dust magnet with all that damp air.
To ansewer your real question yes you can cut the tape and just do the wall but then your going to have to remove the old tape on the ceiling and sand it back so you can apply new tape.
Going to be a real pain trying to match the old texture.
Concider removing it.

Do like I did. Tear the walls off, then use a Utility knife to cut the seam between the ceiling and wall. If Gyprock or Plaster with Lathe, then you have to use a Flat Pry bar with a sharpened edge, to break the seam. If you are good, you will not have a large amount of damage, and can easily repair the seam with Hot mud when you go to do the finishing to prep for prime & paint.

As for textured ceilings, scrape that junk off.

Nope, not in my 70 plus year old Bungalow. Knockdown/Orange Peel/Spray on texture, is to hide the seams, of lazy sloppy mud jobs.

I have Gyprock, and the way I hide the seams, is that I have to shine a light across the ceiling from the wall across it, so that I can see the valley's, and then I just run a knife of Hot mud across to bring everything even.

That is how I did it in my bath refinish, and you cannot tell where the 18 inch by 4 foot sheets are, no matter how hard you try.

Why remove all the wall to the ceiling? Why not leave 4-6" then butt to it? I've done it that way dozens of times when doing showers and tub enclosures.

That thought crossed my mind and might work.

Replacing tub and replacing tile tub surround with 3 piece plastic one. At least thats the plan.

Im under the impression its easier and quicker to put up, never have to regrout.

come out to the Pacific Northwest all ceilings have orange peel same with walls not having it people think is is crappy drywall job and or the people were cheap and cut corners. it is a regional thing.

I've never regrouted any of my tilework. I've only had to recaulk at the tub/tile joint twice in over 42 years. Where is this bathroom?

Well Im planning on renting this place out so Im more concerned with just getting it done. I want it to be nice but it doesnt have to be luxurious. My main concerns are durability, cost and time.

Ive been thinking Sterling. They look nice, seem pretty durable and are a Kohler product
