This is an a garage that was converter to livable space and there are four outlets on one wall that tare either broken (plastic on box) or don't fit because of the layers of drywall. I could try to repair them but since I'm running conduit around to other parts of the room I was hoping to just remove the outlets and put a box like (https://www.lowes.com/pd/RACO-2-Gan...rd-Square-Ceiling-Wall-Electrical-Box/1098475) over it and then just use that for the outlet. Is there any issue with doing that?

The NM wire would come from the back of the box and transition to thhn to run in the conduit. IN the photo below another layer of 1/2 drywall is going on which would put the box behind it plus the screws are broken on the existing box

You'll have a problem mounting the box.

Since you'll be doing a another layer of drywall, why not open up the wall enough to replace the damaged box with a metal bracket box, like a 4-sw-fb-spl. You can then get the proper rise mud ring to make the receptacle come out flush with the 1/2" drywall you'll be putting up.

I could do that, I do need to transition to conduit anyway so I was just thinking of using the external box instead of putting one back in the wall.

Sure... once you get a flush mud ring you can use an extension ring on it to convert to surface conduit, it that be your goal. All those are common devices for approved installations.

The extension ring for the surface mounted conversion would be a
4-SW-EA-SPL
