Whats the best way to remove the old fake stone the is covering my entire chimney breast in the living room? Once removed is it just a case of adding new drywall to the breast and a lick of paint? I want to be able to mount my TV on the breast, will I need to add some extra batons for strength? The chimney breast is for a wood burning fireplace.

A good rotary hammer set to chisel is the best way to remove a layer of stone/brick. You will need something to nail the drywall to, and it can also serve as an anchor for the TV. It needs to be well anchored to the chimney structure, and spaced as needed for the TV supports. You should have the specs before you install the furring. Check local codes concerning the fireplace. There are usually clearance requirements for any combustible near a working fireplace.
