I've got a fan that goes above the range and, apparently, it's supposed to be connected via wire nuts. I've already got an outlet in just the right location, so is it acceptable to attach a 3-prong plug to the fan and then plug it in? Thanks.

Get an appliance pigtail (like the one you'd install on a dishwasher or disposal) and a connector to secure it at the opening to the hood, and plug it in. It seems to be the new preferred method these days.
