So we want to replace the tile in the bathrooms and replace the linoleum in the kitchen with real tile. What's the best way to pull up old tile so it doesn't leave a really uneven surface to work with? Will I have to sand or replace the subfloor to put tile back down?

If you mean you want to put down ceramic tile, you can go right over the old vinyl or linoleum with plywood or tile backer board. You must have a very stiff floor for ceramic tile, minimum of 1 1/4" thick. If the floor is not stiff, you will end up with cracked tile and or grout. There are some good books for DIY at big box stores, pick one up. They are full of information that we don't have room for here.

I disagree with Bill about just going over a vinyl floor. Many vinyl floors have cushioned backing. This spongy material will not support a tile floor.
What you need to do in the bathroom will depend on what you have there now. If it's and old house you might have a mud job to contend with. Under the concrete you might have really old waste pipes and/or supply pipes that should really be replaced.
How old is the house and has the bath ever been remodeled?

1978 house and I don't know if they have been but by the looks(thus the change) they haven't been. What I'm curious about is when I watch the tile shows they throw down a bunch of bug and mortar so I'm guessing that this is hard to get up. The two bathrooms have tile already so how hard is it to remove that so it's a flat surface again so I can put new tile down?

If the bath is 1978 vintage, it's probably a plywood subfloor with wire lath attached to it and an inch or so of concrete base. It should come up pretty clean. If wire lath, wear heavy leather gloves and have a first aid kit handy. You will bleed.
