Never knew anyone who used them but in an emergency can you bake with them.?

I bought few cans of evaporated milk, just in case, to bake with. But I always have some in the pantry even if I only use it for pumpkin pie.

I think it might be what's in the mixes you buy.


This is an interesting write-up, I think. It's not really about whether or not there is dried egg in mixes but it does mention them. What's interesting is women's perceptions or the baking industry's perceptions of women's perceptions. ;D

Btw, it's a great source of protein, even if it was added to a meal.

I've been told by sub sailors that their food was wonderful. Do you think they got better food?
I do think they ate better, no where as many to cook for so they could take their time and fix it right. There were 3,500 guys on the Rosie so cooking was hash cooking. Now the officers ate like kings on the Rosie, I know that for a fact. The regular food was good when we were in port but the second we pulled out to sea, powdered milk and eggs. The rest of the food was good though, just leave the fried chicken alone. It looked so nice and good....until you bit into it, blood ran out, nope ain't gona eat half done chicken.

I've dehydrated my store bought eggs and used them in pancakes, waffles, cornbread. The work quite well. I just mix in with my dry ingredients including if milk is called for an appropriate amount of powdered milk. Add the fat, I use lard mostly, then add water. Works just fine. I would not hesitate to use them in any other baking I can think of. Currently I have 8 or 9 half pint jars of powdered eggs on hand. About 8 dozen eggs.

I'm told powdered eggs make really bad scrambled eggs. FWIW.
