Not sure if this is the correct section but..

Looking to renovate my inground pool deck/coping (sounds straight forward right) issue is that my coping is built into the concrete deck which makes for a big project.

im looking for a less exspensive idea, my thought were to cut the old vinyl coping and just cap with pavers. is this do-able?

Normally easy that type of clip on the edge of a pool with a vinyl liner. When the liner have to be replaced both clips must be removed in order to free up the liner. As long as you don't weaken them so that liner pulled free and so that it can be easily removed in the future I don't see a problem with what you are proposing to do.
