We are in the middle of building a small patio. 8x8 ft.
Digging out & leveling the soil, then gravel then concrete sand, then either pavers or fieldstone.

We also want to build a pergola, roughly the same size.

Advice? I'm a total newbie. Is there anyway to do the patio and then attach the pergola or do I NEED to set the four beams in concrete first and do the pavers around or just inside of it?

I'm in southeastern PA--- but our spot gets a bit windy--- I think because we're surrounded by a field and open parking lot.

I am unclear what you are planning. I don't understand if you are planning to put wooden boards around the edges of your patio, or if you think you need the "beams" to support the pergola. Most pergolas are supported on posts which in turn are supported on concrete footers, you don't typically need grade beams to support a pergola. Then again, maybe you mean a fully enclosed structure with a roof. Maybe post a picture of a structure similar to what you have in mind, be easier to understand.

Sorry, I meant posts. I'm not up on the correct terminology.

Alot of the tutorials I've found are anchoring them into concrete/cement patios. But I'm planning a paver or field stone patio. I'm wondering if I need to do cement footers for the four posts or if there are other options available to me.

You will need to pour the posts and footings for the pergola first the concrete needs to extend at least 6" above grade if you want it to be done properly and last a long time. The general rule is to have any wood about 6" above grade. If you dont want the posts sticking up above the slab simpson makes a special standoff post base for that.
