I was worried about using pvc due to me being in Arizona . Was worried about the sun and high heat during the summer since the conduit will be run on the side of the house.

locale.

In conduit run individual THHN or XHHW wires. H-H-N all the same color mark em with tape. The EMT conduit is the ground, woot!
THHN or XHHW lets you run 75C ( still limited by terminations) so welcome to 100A land! (We're talking aluminum right? #1Cu is good for a lot more still). Or you can go down a wire size if you'd rather, and save some coin.
DO NOT save coin on the subpanel. Splurge on spaces here - spaces are dirt cheap, and running out of space is a huge, expensive project killer.
The garage walls are open 2x4 right now but will be covered later.
How would I run the cable in the outside wall to the top of the sub panel ?
Keeping the cable enclosed. I can’t seem to find any fittings that would turn 90 deg. In such a short distance from the outside to the top of the panel if it is flush mounted or surface mounted or does it need to be enclosed once it enters the wall since I will be insulating and putting plywood on the walls ?
You can do it with conduit bodies, but they must remain accessible forever, so can't be buried in the wall. Individual THHN/XHHW wires won't have any trouble making those turns. Cable will probably be too balky.
