Made the cake this morning and its gone....sent to daughters house. It wasn’t photo worthy cause you couldn’t really see the pineapple.
the only times I’ve had it here in the south they doubled the brown sugar and pecans mixture but when I did that it covered up the pineapple so it wasn’t as attractive as a typical pineapple upside down cake but was very tasty
I didn’t have cardamom, it was over at my daughters house so I looked up a substitute and ended up mixing some cinnamon, tiny bit of nutmeg and tinier bit of ginger which added a nice flavor to the cake.
