On a 208 system I know I can use one neutral for 3 hots, assuming that each hot is on a different phase. So, if I send 6 circuits of power (2 from each phase) and 2 neutrals to a box, and then break that out to 3x 12/3 mc (2 hots, 1 neutral) can I just bond all 5 of the neutrals together (2 from panel, plus 3 from mc) or do I need to run a 3rd neutral so each mc has a dedicated neutral back to the panel?

No. You can't do that. You can have A1,B1,C1 sharing a neutral in various combinations. You can have A2,B2,C2 sharing a neutral in various combinations. But you can not combine hots A1 and B2 to share a neutral.
