I have a closet at the end of a hallway that was never trimmed out and I don't like the current bi-fold. I'd like to replace with a regular door (pre-hung).

The opening is 29 3/4 X 79 3/4. That includes the finished Sheetrock around the frame and carpeting. Rough opening requirements for a 28" door are 30" X 82 1/2.

I think I can take care of the height by just trimming the door on my table saw.

For the width I was thinking about just cutting out the Sheetrock (I'd do this to the top also so I don't have to cut the door down as much). Assuming it's 1/2", that would give me 1" if I did both sides. I guess I could even just do one side to get to a width of 30 1/4".

Does this all make sense? I'm thinking much cheaper than ordering a custom door. If so, can I just use an exacto knife to cut out the Sheetrock? Is there anything else I need to remove?

That drywall should come out anyway that's on the jambs.
If it was done right there's going to be metal outside corners.
Just use a hammer and tap down along the length of it to crack the drywall compound and pull out the nails holding it in place to remove.
Done right there will be no, or minimal damage to the walls and the trim will cover up were the outside corner was removed.
