I decided to replace they 3-way switches I have with these nice sexy master/slave models. I disconnected the old ones and now am not sure how to re-connect the new ones . I checked and it looks like the white wire that is connected to the one switch is the hot (not marked BTW).

Yes the wiring is correct to make it work but the color convention is incorrect. You are switching a white wire. It would have been better or to convention to use the black in the 3 conductor cable for the switched hot and mark the white as a traveler.
