I installed an Ambient Technologies RCST remote control, worked perfectly for 5 months.
A few times recently we have come into the room and the fireplace is on without anyone touching it, the remote is set to manual control.
The only thing that changed in the 5 months is the pilot flame height was adjusted down.

If you have not changed the four dip switches on the transmitter and receiver from their factory default ON position, your fireplace may be receiving signals from a newly installed transmitter in a nearby house.

Even if you have changed the switch settings from default, four 2-position switches only allow for 16 unique codes, so if there is a nearby house that might possibly have another transmitter it would be worth changing your code.
