I am doing some stucco repair on a house built in the 40's. Some missing parts of the foundation stucco over poured concrete. I seem to be able to get a good match on the texture by finishing with a sponge float and a tile sponge. The issue I am having is with color. I am using Type M mortar mix and it is showing up too gray against the more brown of the existing stucco. I assume this was probably mixed on site with coarse sand and some type of cement. I am willing to buy some sand and try to mix it, I am seeking input on what type of sand and cement to buy to get a browner color. TIA

Premix bags of mortar are made with white sand and it sounds like yours was mixed on site with brown sand. Not all sands are equal so that along with aging might make it impossible to get a perfect match. You can also buy colored mortar. Painting the foundation is also an option.

To match the existing color use White Cement with the proper amount of sand.
To match the color use samples of the above mix. Say you are mixing this.
1 Cement
1/2 Lime
4.5 Sand
Use the same volumes in very small amounts mixed dry add dry concrete dye to this small mix until you get the dry mixture to match the desired color.
You will than have to convert the small mix to the large mix.
If you can find White premixed mortar use the same dry dye mix to get the correct color.
Note when water is added you will get a darker color but this will cure to the dry mix color.
