My father in law took down a track light fixture so I didn't see how it was wired. I have a ceiling mounted light box with 2 wires coming into it. One is a 3 wire. The other is a two wire. It seems one of the wires is "switched"(the power to it goes off/on with the switch), and the other wire has constant power

Now wondering how to hook up a regular 2 wire light fixture

Are you counting the ground as the third wire?
What color are the wires?
Pull out the switch a tell us how may wires are attached to it. (do not count the bare ground.
Kill the breaker first!

If the swiched wire is red, do this:

Connect the 2 wites together, connect the 2 blacks together. Connect the white fixture wire to the 2 whites, connect the black fixture wire to the red.

If your colors are different, post what you have.
