So we replaced our service panel and upgraded most of the electrical in our old house, but before I close up the wall, I'm wondering if I can leave some open conduit hooked up to the panel for adding circuits in the future?

If you could run pipe to a box that is accesible than your good to go. Doubt the inspector would allow an open pipe with no box on it.

It is very common in commercial jobs where the panel is recessed to have a spec stating they want an empty pipe to an accessible box for future.
