I know you are not supposed to install cabinets over a floating laminate floor- but how about installing under refrigerator and stove?

People do it all the time. But you know that laminate in a kitchen is a bad idea. Any moisture and the particle board backing will fall apart.
I have it in the kitchen and it's under the fridge and stove.

I haven't had a problem due to moisture but I have had a problem with a few of the joints popping open and it has been sticky in one area since it was new. There have been spills and we just wipe it up right away so it hasn't done any damage.

I wouldn't recommend it for any area :)

Plus the loaded fridge is a pretty heavy item to sit on laminate day after day after day. Especially if it is sitting on the 4 little wheels so you can pull it out.
Having the refrigerator and or stove on a laminate floor will not hurt it in any way. As long as you leave spacing around the perimeter it will be ok.
