We are about to update our kitchen & bathroom counters. Which is better (less maintainence, more durability, etc.) granite of silestone?

I prefer the manmade stones. No sealing is needed, color more consistent, predictable, less likely to crack at faults(no faults).

I agree with the other posters... engineered stone better is better than granite, especially Silestone, I have had mine for two years and never once had a problem with it. I feel the best part about Silestone is the anti-microbial protection!
