How would go about repairing the back wall of a kitchen cabinet that had to be cut in order to run PEX for a repipe? I asked the guys at HD if they sold a matching thin veneer that I could glue to the rear of the cabinet, but they do not. Any ideas?

Unless the cabinets are new or near-new, whatever you put in there will not be an exact match to your other cabinets. As Joe says, just cut a piece of thin plywood and glue it in place. Stain it or paint it as you wish (before you install it).

How much attention do people pay to the inside back of a base cabinet? Not all that much.

I was thinking about getting a vinyl adhesive with a matching wood grain and color and sticking it on to the repair area to just cover the repair from just above the top self to the top of the rear cabinet. My wife says I'm too much of a perfectionist, but it would bother me knowing it isn't restored.

I think the big box stores sell a 3mm wood veneer as well.

Sounds like a silly idea to me.
How about you post a picture so we can see what your seeing.
Have to be missing something to come up with that idea.
No one's ever going to see it unless there on there hands and knees and looking for it.

when I cut access panels such as this. I reinstall the drywall piece using screws and cleats (no tape/mud), and replace the panel which I cut out with a few dabs of caulk. if the joint is too bad, you can fill with a bead of colored caulk.
