Is moisture resistant sheetrock required in a kitchen? I was going to at least put it up around the stove and sink. But do the codes require it?

No, but nice to have along the wall where the sink is, going up at least 18" to 24" above the counter, if you do not plan on a tile backsplash.

If doing tile above the counter, I would just place it where the sink base is going.

Check your local codes some areas say yes in all wet areas.
